This year marks our sixteenth anniversary. In 2010, Faysel, Frenk, and Julia – driven by a passion for hospitality, design, and food – opened restaurant WILDE ZWIJNEN in Amsterdam East. We named our cuisine Modern Dutch, in which we use seasonal and where possible, regional products, adopting a sustainable approach. Our foundation lies in Dutch cuisine, complemented by influences from Belgium and French techniques. The Dutch press named us one of the pioneers of the 'Nouveau Ruig' (Nouveau Rough) movement. That was an early recognition of our style: raw and with finesse.
